ingredients:

  • 60ml Citrina Limoncello

  • 20ml fresh lemon juice

  • 10ml sugar syrup (or 1 tsp caster sugar)

  • 30ml egg white (or aquafaba for vegan)

  • Rocks Glass

 

method:

  1. Add all ingredients to a shaker without ice.

  2. Dry shake (without ice) for 10 seconds to emulsify.

  3. Add ice and shake again until well chilled.

  4. Strain over ice in a rocks glass.

  5. Garnish with a lemon twist or a few drops of bitters swirled on the foam.
