ingredients:

60ml Citrina Limoncello

20ml fresh lemon juice

10ml sugar syrup (or 1 tsp caster sugar)

30ml egg white (or aquafaba for vegan)

Rocks Glass
method:

Add all ingredients to a shaker without ice.

Dry shake (without ice) for 10 seconds to emulsify.

Add ice and shake again until well chilled.

Strain over ice in a rocks glass.

Garnish with a lemon twist or a few drops of bitters swirled on the foam.
